5 Years of Waterbeach Weisse ๐Ÿ–

It's coming up to five years since we started making beer here at Pastore. The original brewery tag line read something like "new age fresh fruited berliner weisses, sour IPAs & blended wild ales". And whilst beers and recipes have come & gone here the Waterbeach Weisse has been a constant, brewed monthly with different fruits added in fermentation.

A style of beer we love, we have always aimed for something light, fruit-forward, acidic, dry, zippy & refreshing. In a world of pastry beers we are so happy to see our beloved Waterbeach Weisse continue to thrive ๐Ÿฅ‚

For this 5 year anniversary we are releasing three very different variations on the Waterbeach Weisse, one classic fruited, one double dry hopped & one aged for years with wild yeast. More info on these soon!

Our Ram in Veneto ๐Ÿน

After the success of last year's Negroni style sour we have returned to the Italian bitter style for the Pastore Orange Spritz Sour.

We used gentian root (an important bitter constituent of aperol and other Italian bitters) on the brewday to contribute some bitterness before fermenting with our fresh sour mixed culture and conditioning on Italian oranges & white grapes ๐Ÿฅ‚ we also aimed for a higher carbonation than usual to achieve maximum spritziness in glass โ˜€๏ธ

Aviation ๐Ÿน

This month's first cocktail sour is based on an Aviation, a purple gin based cocktail. 

This took some creative thinking to achieve the colour & flavour profile we were looking for. On the brewday cherry wood was used to impart some light maraschino notes then a lot of butterfly pea flowers were added in the whirlpool to bring about the desired colour change. We then conditioned on lovely Italian lemons & juniper during fermentation to bring the final delicate lemon & gin notes to the blend. 

A quite unique beer with lovely notes of citrus & juniper, zippy acidity, super refreshing โ˜€๏ธ
