Pastry Sours
A pastry sour for us is a Pastore sour beer representation of our favourite pastries and desserts.
These are generally brewed to a higher strength 5%+, with lots of oats for mouthfeel and fermented
with our fresh sour mixed culture of Hornindal Kveik and Lactobacillus Plantarum.
We then super-charge the beer with a hefty dose of fruit puree to achieve the base fruit profile of
the dessert before adding any further pastry elements such as vanilla or almond or maple syrup
or honeycomb. This results often in the sweetest beers of our range but still with that classic
Pastore acidity.
Sweet, decadent, tart, dessert beer.
